The longer you leave it on, the more it will cook as you're probably aware. I believe even when it's turned off, the food will still continue to cook while the crock pot is warm. Just like putting something in the oven, turning the oven off, and leaving it in there. If you take it out of the crock pot, I wouldn't let it sit for too long.
