Ingredients

# 1 tablespoon olive oil

# 4 boneless pork sirloin chops (4 ounces each), trimmed

# ground black pepper

# 2/3 cup cider or apple juice

# 2 tablespoons dijon mustard

# 2 tart apples, cored and sliced 1/4″ thick

# 1/2 cup raisins

# 1 bunch scallions, white and light green parts, thinly sliced (1/2 cup)

# 3 tablespoons cold water

# 2 teaspoons cornstarch

Directions

1.
In a large skillet, heat the oil over medium-high heat. Add the pork and brown on both sides. Sprinkle with the pepper to taste.
2.
In a small bowl, stir together the cider and mustard. Pour over the pork. Reduce the heat to low, cover, and cook for 5 minutes.
3.
Add the apples, raisins, and scallions to the skillet. Cover and cook for 5 minutes. Use a slotted spoon to transfer the pork and apples to a serving platter. Keep warm. Leave the skillet on the heat.
4.
In a small bowl, stir together the water and cornstarch. Add to the skillet, increase the heat to medium, and bring to a boil, stirring constantly. Reduce the heat and cook for 2 minutes. Serve the sauce over the pork chops and apples.

# 1 can (20 ounces) pineapple chunks, packed in juice

# 2 tablespoons cornstarch

# 1/4 cup red wine vinegar

# 2 tablespoons reduced-sodium soy sauce

# 1 1/2 pounds boneless pork top loin, trimmed

# 2 green bell peppers, thinly sliced

# 1 large onion, thinly sliced

# 1/4 cup water

Directions

Drain the pineapple, reserving the juice.
2.
In a small bowl, combine the sugar, cornstarch, and ginger. Stir well. Stir in the vinegar, soy sauce, and reserved pineapple juice. Set aside.

Thinly slice the pork against the grain and cut it into bite-size pieces.
4.
Coat a wok or large skillet with cooking spray and heat over medium-high heat. Add the pork and cook, stirring constantly, for 2 minutes. Add the peppers, onion, and water. Cook, stirring constantly, for 3 minutes, or until the pork is no longer pink and the vegetables are crisp-tender.
5.
Stir the soy sauce mixture, then add it to the pan. Cook, stirring, just until thickened. Stir in the pineapple chunks and heat through.
